I've never been to America, but in general, I think that it's very useful to bring some food with you, such as crackers, cereal/coconut bars (or whatever else you like) and if you are somewhere where you can make food, things like pasta. I find it very useful when you are going to eat out to bring a couple of snacks with you just in case you can't find anywhere suitable to eat, or if there are only salad options.

A f good thing to have is the " find me gluten free" app for your smart phone. Otherwise go to local food markets and buy fresh produce .
I agree, the "find me gluten free" app is wonderful. I have used it in Vegas, and it is very helpful. As for Cancun, I would recommend researching local food and bring snacks. When I travel internationally I pack nuts and Quest Bars.

Congratulations on your upcoming wedding/honeymoon! Vegas has lots of options at all sorts of price points. The super fancy places are also willing to go the extra mile for cross contamination and answering questions for you. There are Whole Foods and Sprouts markets for your GF shopping needs depending on how long you are staying and if you're going off strip. I stay at home with family when I visit and don't generally eat out all that much, but there are a bunch of options every time we do go. It depends on how far you're willing to go off strip if you want to get GF Crepes, or a GF bakery or two for example. Find Me Gluten Free app will help you out very much.
As for cancun, I'd imagine you'll have good luck with grilled seafood options, corn tortillas and fresh veggies. Bring a spanish translation card talking about Celiac disease and you should be good to go. I haven't heard that many people complain about difficulty if they like seafood.
